Healthy Vegetable Soup Recipe with Kale

Ingredients

Instructions

2. Add the carrots, celery, potatoes, thyme, and bay leaf. Cook, stirring occasionally, for 5 minutes.
3. Pour in the vegetable broth and bring to a boil. Reduce the heat and simmer, covered, for 15 minutes.
4. Add the kale and cook for 5 minutes more.
5. Season with salt and pepper, to taste.
6. Serve hot.
Tips
• You can substitute other leafy greens such as spinach or Swiss chard for the kale.
